  • Cooked ground beef chorizo, or breakfast sausage – Adds a rich, savory flavor.
  • Rotel tomatoes undrained – Brings a tangy, slightly spicy kick.
  • White onion chopped – Enhances the depth of flavor.
  • Shredded cheese Monterey Jack or Pepper Jack – For extra cheesy goodness.
  • Fresh or pickled jalapeños optional – Adds heat and flavor.
  • Fresh cilantro optional – A fresh, herby touch.
  • Tortilla chips – The perfect dipper!

Instructions
 

1️⃣ Preheat the Smoker:

  • Heat your smoker to 250°F while you prep the ingredients.

2️⃣ Prepare the Ingredients:

  • Place cubed Velveeta, cooked chorizo or beef, Rotel tomatoes, chopped onion, shredded cheese, and jalapeños into a cast-iron skillet or foil pan.

3️⃣ Smoke the Queso:

  • Set the pan on the smoker, close the lid, and let it melt for about 1 hour.

4️⃣ Stir & Adjust:

  • After an hour, stir the dip until smooth. If not fully melted, let it cook for another 15-30 minutes, stirring every 15 minutes.

5️⃣ Serve & Enjoy:

  • Carefully remove from the smoker (it will be HOT!).
  • Transfer to a serving dish or slow cooker to keep warm.
  • Serve immediately with tortilla chips!

Notes

  • Keep it warm – Use a slow cooker on the "warm" setting to keep the queso smooth.
