Ingredients
  

  • 1 1/2 cups all-purpose flour 180g
  • 1/2 cup unsalted butter room temperature (113g)
  • 1 cup peanut butter 250g
  • 1/2 cup brown sugar lightly packed (100g)
  • 1/2 cup granulated sugar 100g
  • 1 tsp vanilla extract 5mL
  • 1 large egg room temperature
  • 3/4 tsp baking powder 3g

Instructions
 

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Mix dry ingredients: Sift together flour and baking powder, then whisk to combine. Set aside.
  • Cream butter and sugars in a mixing bowl until light and fluffy.
  • Add peanut butter, then mix in the egg and vanilla extract.
  • Incorporate dry ingredients gradually, mixing until just combined.
  • Roll dough into 1-inch balls and place on the baking sheet. Flatten each cookie with a fork in a crisscross pattern.
  • Bake for 10 minutes, until edges are set.
  • Cool completely on the baking sheet before transferring to a wire rack. Enjoy!

Notes

For softer cookies, slightly underbake them—they firm up as they cool.
