These Baby Shower Meatballs are the ultimate party appetizer! Slow-cooked in a sweet, smoky, and slightly spicy sauce, they’re packed with flavor from fig jelly, chilies, and a splash of Hennessy. Perfect for parties, potlucks, or even a family meal—trust me, these will disappear fast!

Ingredients
  

For the Sauce:

  • New Mexico chilies dried, stems removed – Adds smoky heat.
  • Árbol chilies dried, stems removed – Brings an extra kick of spice.
  • Fig jelly – Sweetens and balances the heat.
  • Ketchup – The base of the rich tangy sauce.
  • Honey – Adds natural sweetness.
  • Apple cider vinegar – A touch of acidity to brighten flavors.
  • Fresh ginger minced – Gives warmth and depth.
  • Cinnamon stick – A subtle aromatic twist.
  • Dried thyme – Infuses the sauce with herby goodness.
  • Onion powder & garlic powder – For extra savory flavor.
  • Black pepper & cayenne – Adds mild heat and spice.
  • Fennel seeds & paprika – Earthy and slightly smoky undertones.

For the Meatballs:

  • Frozen fully cooked meatballs – Regular or vegetarian options work.
  • Hennessy optional – A splash of cognac for richness.

Instructions
 

Prepare the Chilies:

  • Boil at least 3 cups of water and add dried chilies. Let them soften for 5 minutes.
  • Transfer softened chilies to a blender with 1½ cups of the chili water and blend until smooth.
  • Pour the blended chili mixture into your slow cooker.

Make the Sauce:

  • Whisk in fig jelly, ketchup, honey, apple cider vinegar, ginger, cinnamon stick, thyme, and all the spices.
  • Stir to combine into a smooth, rich sauce.

Add the Meatballs:

  • Toss frozen meatballs into the slow cooker, stirring to coat them well.

Cover and cook:

  • High setting: 2 hours
  • Low setting: 4 hours

Optional Cognac Boost:

    If using Hennessy, add it:

    • High setting: 30 minutes before the end.
    • Low setting: 1 hour before the end.
    • Stir the meatballs well to incorporate the flavors.

    Serve & Enjoy:

    • Keep warm in the slow cooker for parties, or serve over rice, in sandwiches, or as an appetizer.

    Notes

    • Adjust the Spice Level – For a milder version, reduce the chilies or substitute with red pepper flakes.
    • Cognac is Optional – It adds richness but can be skipped.
