Prepare the Chilies:
Boil at least 3 cups of water and add dried chilies. Let them soften for 5 minutes.
Transfer softened chilies to a blender with 1½ cups of the chili water and blend until smooth.
Pour the blended chili mixture into your slow cooker.
Make the Sauce:
Whisk in fig jelly, ketchup, honey, apple cider vinegar, ginger, cinnamon stick, thyme, and all the spices.
Stir to combine into a smooth, rich sauce.
Cover and cook:
High setting: 2 hours
Low setting: 4 hours
If using Hennessy, add it:
High setting: 30 minutes before the end.
Low setting: 1 hour before the end.
