Ingredients
For the Crust:
- Graham cracker crumbs – Forms the buttery, crunchy base.
- Butter – Helps bind the crust together.
- Sugar – Adds a touch of sweetness and crunch.
For the Layers:
- Sweetened flaked coconut – Toasts beautifully while baking, adding flavor and texture.
- Sweetened condensed milk – The secret to gooey, chewy deliciousness!
- Seedless raspberry preserves – A sweet-tart layer that pairs perfectly with coconut.
- Pecans – Adds crunch and a nutty flavor.
For the Chocolate Drizzle:
- Semisweet chocolate chips – A rich, chocolatey topping.
- White baking chips – For a beautiful contrast in the drizzle.
- Shortening – Helps keep the chocolate smooth for drizzling.
Instructions
1️⃣ Prep the Crust:
- Preheat oven to 350°F (175°C).
- In a small bowl, mix graham cracker crumbs, melted butter, and sugar until combined.
- Press the mixture into a lightly greased 9×13 baking dish to form the crust.
2️⃣ Add the Coconut Layer:
- Sprinkle flaked coconut evenly over the crust.
- Drizzle sweetened condensed milk over the top to create a rich, chewy texture.
3️⃣ Bake & Cool:
- Bake for 20-25 minutes, or until the coconut is lightly golden brown.
- Let the bars cool completely before moving on to the next step.
4️⃣ Add the Raspberry & Pecans:
- Spread a layer of raspberry preserves over the cooled coconut crust.
- Sprinkle chopped pecans evenly on top.
5️⃣ Drizzle with Chocolate:
- Melt the semisweet chocolate chips in the microwave, stirring until smooth. Drizzle over the pecans.
- Melt the white baking chips with shortening and stir until smooth. Drizzle over the top for a finishing touch.
6️⃣ Set & Slice:
- Let the bars sit at room temperature or in the fridge until the chocolate is firm.
- Cut into squares or bars, and enjoy the chewy, chocolatey, coconut-packed goodness!
Notes
- Use Parchment Paper – Lining your baking dish makes removing and cutting the bars so much easier.
- Chill for Cleaner Slices – Letting the bars set in the fridge before cutting prevents the layers from sliding.
- Swap the Nuts – Try walnuts or almonds instead of pecans for a different crunch.
- Try Different Jams – Raspberry is amazing, but strawberry, blackberry, or even apricot would work beautifully!
